If you've ever sipped a drink made with Captain Morgan rum you've had a cocktail that's custom made for fun in the sun; mai tais and rum punches are the perfect libations to accompany a day at the beach or a carefree sea cruise. But now Captain Morgan has revealed his dark side. You can remain relaxed though; the lovable spokesperson hasn't suddenly decided to start making people walk the plank. To the contrary, the good captain advocates nothing but fun with the introduction of Captain Morgan Black Spiced Rum, a 94.6 proof liquor made with blackstrap molasses and flavored with cloves, cinnamon and vanilla. The make-up of the new rum makes it a good ingredient for cocktails normally associated with whiskey and Tobey Maloney, renowned mixologist and proprietor of Chicago drinkery The Violet Hour, has invented new versions of whiskey-based cocktails like the Old Fashioned as well as the Perfectly Black, a dark take on the vodka martini. At a recent promotional stop at Mabel's on Main in Scottsdale, Arizona, Maloney showcased a handful of his new creations including an obvious crowd pleaser, the Captain Morgan Black and Honey. Here's the recipe:

1 � oz. Captain Morgan Black Spiced Rum
� oz. fresh lemon juice
� oz. honey
1 lemon wedge

Combine liquid ingredients in a cocktail shaker with ice and shake until cold. Strain into a rocks glass and garnish with a lemon wedge.

Maloney also shared a few drink making secrets such as, when a recipe calls for fresh lemon juice---squeeze it yourself---do not use bottled juice. Most of Maloney's drinks are also served on the rocks or shaken with ice as Maloney says a bit of water is needed in order to bring out the full flavor of each drink.
